Fiesta Corn Dip

Wait to judge the salt until the cheddar and canned vegetables are mixed in. Their sodium levels vary enough that adding salt automatically can push the dip too far.

Why the one-hour chill is part of the recipe
The dip is edible as soon as it is mixed, but it is better after chilling. The cream cheese firms again, the shredded cheese hydrates slightly in the dairy base and the cumin, lime and scallion stop tasting like separate additions. The result is more cohesive and easier to scoop with a chip.
If liquid collects around the edge after chilling, pour it away. Stirring it back in reverses the moisture control you worked for at the start.
Adjust the flavor without loosening the dip
