Texas Trash Dip
Texas trash dip is the kind of unapologetically cheesy hot bean dip that earns a permanent spot beside the tortilla chips. Refried beans give it body, cream cheese and sour cream keep it creamy, and green chiles plus taco seasoning bring enough savory heat to stop all that cheese from tasting flat.
What Is Texas Trash Dip?
Despite the name, this is essentially a warm, extra-creamy Tex-Mex bean dip. The recognizable formula combines refried beans with a creamy dairy base, taco-style seasoning and a generous layer of melted cheese. It is richer than ordinary bean dip and softer than a seven-layer dip, so it is meant to be served hot and scooped.
The useful thing about this style of dip is that almost everything is pantry or refrigerator-friendly. There is no meat to brown and no fresh salsa adding excess liquid, which makes it particularly easy to assemble for a party.
Ingredients That Make It Work
- Refried beans. They create the structure of the dip. Regular canned refried beans work well; choose a style you already like because their seasoning comes through in the finished dish.
- Cream cheese. Let it soften before mixing. Cold cream cheese tends to stay in little lumps instead of disappearing into the beans.
- Sour cream. This loosens the dense beans and cream cheese so the baked dip stays scoopable rather than turning into a heavy paste.
- Taco seasoning. A standard 1-ounce packet seasons the whole skillet efficiently. Because both the seasoning and cheese contain salt, taste before adding any extra.
- Diced green chiles. Drain them well. They add mild chile flavor without making the mixture watery.
- Monterey Jack and sharp cheddar. Jack gives a smooth melt while cheddar contributes more pronounced flavor. Some goes inside the dip and the rest creates the molten top.

How to Make Texas Trash Dip
- Start with the creamy base.
Mix softened cream cheese with sour cream first. Getting those two ingredients reasonably smooth before adding the beans is much easier than trying to chase cream-cheese lumps through a thick bean mixture.
- Add beans and seasoning.
Mix in the refried beans, taco seasoning and thoroughly drained green chiles. Scrape the bottom and sides of the bowl so the seasoning is distributed evenly.
- Put some cheese inside.
Fold in one cup each of Monterey Jack and cheddar. Cheese throughout the mixture gives every scoop the same creamy, stretchy texture instead of concentrating all of it on top.
- Fill the skillet.
Spread the mixture into a lightly greased 10-inch oven-safe skillet or a roughly 2-quart baking dish. Smooth the surface so the dip heats evenly.
- Finish with cheese.
Scatter the remaining Jack and cheddar all the way to the edges. Bake at 350°F until the perimeter is bubbling and the center is fully hot, about 22–28 minutes.
- Give it five minutes.
The dip is extremely hot and a little loose straight from the oven. A short rest lets it settle into the thick, scoopable consistency you want while reducing the chance of molten-cheese burns.
Skillet or Baking Dish?
A cast-iron skillet makes a great party presentation and holds heat well after it reaches the table. A ceramic or glass baking dish works just as well for the recipe itself. The important part is using a vessel with enough surface area that the dip is not several inches deep; a very deep container heats more slowly in the center.
Make-Ahead Strategy
Assemble the dip through the final cheese layer, cover and refrigerate for up to 24 hours. When you are ready to bake, let the dish sit at room temperature while the oven heats. A refrigerator-cold dip may need roughly 5–10 extra minutes in the oven; look for bubbling edges and a genuinely hot center rather than relying only on the clock.
If you are using a cast-iron skillet, avoid extreme temperature changes. Do not take an ice-cold skillet straight from the refrigerator into a very hot oven.
How to Keep It Good on a Party Table
This dip is at its best warm. For a longer gathering, bake it shortly before serving and put out a modest bowl of chips at a time so they stay crisp. If the dip cools and firms up, a brief return to a moderate oven restores the creamy texture better than aggressively overheating it.
Use sturdy tortilla chips rather than very thin restaurant-style chips: the bean-and-cheese mixture has enough weight to snap fragile chips.
Optional Toppings
Green onions add freshness without introducing much moisture. If you want more color, add chopped cilantro or a few thin jalapeño slices after baking. Pico de gallo is delicious too, but serve it alongside rather than piling a large amount onto the dip; its tomato juices can water down the cheesy surface.
Storing Leftovers
Refrigerate leftovers promptly in a covered container and use within 3–4 days. Reheat only the portion you plan to eat, either gently in the microwave or covered in a moderate oven until steaming hot. Stirring a reheated individual portion helps the melted cheese and creamy base come back together.
Texas Trash Dip
A hot, ultra-creamy refried bean dip with green chiles, taco seasoning, Monterey Jack and cheddar.
Ingredients
- 1 (16 oz / 454 g) can refried beans
- 1 (8 oz / 225 g) block cream cheese, softened
- 1 cup (240 g) sour cream
- 1 (1 oz / 28 g) packet taco seasoning
- 1 (4 oz / 113 g) can diced green chiles, drained
- 1 1/2 cups (170 g) shredded Monterey Jack cheese, divided
- 1 1/2 cups (170 g) shredded sharp cheddar cheese, divided
- 2 tbsp sliced green onions, for serving
- Tortilla chips, for serving
Instructions
- Heat oven to 350°F (175°C). Lightly grease a 10-inch oven-safe skillet or a 2-quart baking dish.
- In a large bowl, beat the softened cream cheese and sour cream until mostly smooth. Mix in the refried beans, taco seasoning and drained green chiles.
- Fold in 1 cup each of the Monterey Jack and cheddar. Spread the mixture evenly in the prepared skillet.
- Top with the remaining 1/2 cup Monterey Jack and 1/2 cup cheddar.
- Bake 22–28 minutes, until the dip is hot through, bubbling around the edges and the cheese on top is fully melted.
- Rest 5 minutes, then scatter with sliced green onions. Serve warm with sturdy tortilla chips.
Drain the green chiles well and soften the cream cheese before mixing. For the smoothest dip, grate cheese from a block. The dip thickens slightly during its 5-minute rest, making it easier to scoop with tortilla chips.
