Oreo S'mores Cookies
These Oreo s'mores cookies are built to taste like both desserts at once—not simply chocolate-chip cookies with an Oreo pushed on top. Graham cracker crumbs run through the dough, chopped Oreos bring chocolate-cookie crunch, and the marshmallow goes on partway through baking so it stays soft, stretchy and visible.
What Makes These Taste Like S’mores
A good s’mores cookie needs more than marshmallows. The recognizable combination is toasted marshmallow, chocolate and graham cracker, so all three are deliberately present here. Oreo adds another layer of cocoa and creme without replacing the graham flavor completely.
The timing matters too. Baking a large marshmallow for the entire cookie bake can make it disappear into the dough or leak across the pan. Adding a marshmallow half after the cookie has already begun to set gives it enough time to puff and soften while leaving a distinct gooey center.
Ingredients You’ll Need
- Butter and two sugars. Softened butter creams with the sugars to give the cookie structure without making it cakey. Brown sugar adds chew and caramel notes; granulated sugar helps the edges set.
- Graham cracker crumbs. Use finely crushed crumbs in the dough. They provide the toasted honey flavor that keeps this recognizably s’mores rather than simply an Oreo-marshmallow cookie.
- Oreo cookies. Rough pieces work better than powder here. You want visible bits of chocolate wafer and creme throughout the finished cookie.
- Chocolate. Chocolate chips distribute chocolate through the dough, while a small piece of milk chocolate on the warm marshmallow recreates the melty chocolate layer of a classic s’more. Semisweet chips keep the cookie from becoming excessively sweet.
- Large marshmallows. Cutting them in half gives each cookie a generous center without overwhelming the dough or creating a puddle of melted sugar.

How to Make Oreo S’mores Cookies
- Make the cookie base.
Cream the softened butter and sugars for 2–3 minutes, then mix in the egg and vanilla. Separately whisk the flour, graham crumbs, baking soda and salt. Combining the dry ingredients first distributes the leavener evenly and helps prevent overmixing later.
- Fold in the chunky mix-ins.
Stop mixing as soon as the dry flour disappears, then fold in chopped Oreos and chocolate chips by hand. Overworking cookie dough after flour is added can make the finished cookies tougher.
- Give them room.
Portion 12 cookies across two parchment-lined pans, leaving at least 2 inches between them. These are substantial cookies and need room to spread without joining together.
- Start the bake before adding marshmallow.
Bake for 7 minutes at 350°F (175°C). The edges will have started to set while the centers remain soft. Press a marshmallow half cut-side down into each center at this point.
- Finish baking.
Return the pans to the oven for another 4–5 minutes. Look for set, lightly golden edges rather than a fully firm center; cookies continue to set on the hot pan after they leave the oven.
- Finish while warm.
Press a small piece of milk chocolate and extra crushed Oreo onto each puffed marshmallow. The residual heat softens the chocolate enough to adhere without requiring another full bake.
How to Get a Toasted Marshmallow Top
The regular oven gives the marshmallow a soft, lightly colored finish. If you want the campfire look, switch to the broiler only after the cookies are otherwise baked. Broil for 15–30 seconds and watch continuously. Do not walk away: marshmallow sugar can go from pale to scorched extremely quickly.
Serving Them for a Party
These are at their best when the chocolate is soft and the marshmallow still has some pull. If you are baking for guests, make the dough earlier in the day, portion it, cover and refrigerate, then let the portions sit at room temperature for about 15 minutes before baking. That lets you serve the cookies warm without doing all the mixing during the party.
For a dessert board, pair them with strawberries or raspberries and a few plain graham crackers. The fruit’s acidity is useful alongside a cookie this rich.
Storage and Reheating
Once completely cool, keep the cookies in an airtight container at room temperature for up to 3 days. The marshmallow will become firmer as it sits. To bring back some of the gooey texture, microwave one cookie for about 8–10 seconds. Start short: overheated marshmallow can become extremely hot.
Useful Swaps
Semisweet chocolate can replace the milk chocolate topping if you prefer a less-sweet finish. Chocolate graham crackers make the cookies more cocoa-forward, although classic honey grahams give a clearer s’mores flavor. Other chocolate sandwich cookies work structurally, but using Oreo is what gives this version its intended flavor profile.
Oreo S'mores Cookies
Chewy graham-and-Oreo cookies with chocolate and gooey toasted marshmallow centers.
Ingredients
- 1/2 cup (113 g) unsalted butter, softened
- 1/2 cup (100 g) packed light brown sugar
- 1/3 cup (67 g) granulated sugar
- 1 large egg, room temperature
- 1 tsp vanilla extract
- 1 1/4 cups (156 g) all-purpose flour
- 1/2 cup (50 g) finely crushed graham cracker crumbs
- 1/2 tsp baking soda
- 1/2 tsp fine salt
- 8 Oreo cookies, roughly chopped
- 3/4 cup (130 g) milk or semisweet chocolate chips
- 6 large marshmallows, cut in half crosswise
- 2 oz (57 g) milk chocolate bar, broken into 12 small pieces
- 2 Oreo cookies, roughly crushed, for topping
Instructions
- Heat oven to 350°F (175°C). Line two baking sheets with parchment paper.
- Beat softened butter, brown sugar and granulated sugar for 2–3 minutes, until creamy and slightly lighter. Beat in the egg and vanilla until smooth.
- In a separate bowl, whisk flour, graham cracker crumbs, baking soda and salt. Add to the butter mixture and mix on low just until no dry flour remains.
- Fold in the chopped Oreos and chocolate chips. Divide into 12 portions, about 2 generous tablespoons each, and space them at least 2 inches apart on the prepared pans.
- Bake for 7 minutes. Remove the pans and gently press one marshmallow half, cut side down, into the center of each partially baked cookie.
- Return to the oven for 4–5 minutes, until the cookie edges are set and lightly golden and the marshmallows are puffed. For more color, broil for 15–30 seconds at the end, watching continuously because marshmallows burn quickly.
- Immediately press a small piece of milk chocolate and a few crushed Oreo pieces into each warm marshmallow. Cool on the pan for 8–10 minutes before moving to a rack.
Add the marshmallows partway through baking rather than at the beginning so they stay visible and gooey instead of melting away. If you use the broiler for extra toastiness, stay beside the oven—the change from golden to burned can happen in seconds. These cookies are best slightly warm.
