Snickers Fudge

This Snickers fudge uses a firm chocolate-condensed-milk base, a thin caramel-peanut layer and a milk-chocolate finish. The key is keeping the caramel layer thin enough that the finished slab still slices cleanly instead of sliding apart.

Ingredients You’ll Need

  • 18 ounces (510 g) semisweet chocolate, finely chopped or chips
  • 1 (14-ounce) can sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon fine salt
  • 8 ounces (225 g) soft caramels, unwrapped
  • 2 tablespoons heavy cream
  • 1 cup (140 g) roasted salted peanuts, roughly chopped
  • 4 ounces (115 g) milk chocolate, chopped

How to make Snickers fudge

  1. Step 1.

    Line an 8-inch square pan with parchment paper, leaving overhang on two sides.

  2. Step 2.

    Combine the semisweet chocolate and sweetened condensed milk in a heavy saucepan over low heat. Stir constantly until the chocolate is almost completely melted, then remove from the heat and continue stirring until smooth. Stir in the vanilla and salt.

  3. Step 3.

    Spread the chocolate mixture evenly in the prepared pan. Refrigerate for 20–30 minutes, just until the surface is firm enough to support the next layer.

Build the candy-bar flavor in separate layers

A Snickers-style fudge works best when chocolate, caramel and peanuts are recognizable instead of being stirred into one uniformly sweet mixture. The chocolate-condensed-milk base provides the structure. A thinner caramel-peanut layer gives the familiar chew and salt, while the milk-chocolate top finishes the candy-bar effect without making the whole slab overly soft.

The caramel is intentionally kept separate from the fudge base. Mixing a large amount of soft caramel directly into condensed-milk fudge can interfere with the clean set that makes small party squares easy to stack and serve.

Low heat keeps the chocolate smooth

Condensed milk fudge does not need a candy thermometer, but it does need gentle heat. Chocolate that gets too hot can become thick, dull or grainy. Stir over low heat and pull the pan off the burner while a few small pieces of chocolate are still visible; residual heat will finish melting them.

How to get neat layers

Chill the chocolate base only until the surface is firm enough to support the caramel. If the first layer is still warm and fluid, the caramel sinks into it; if it is frozen hard, the layers can separate more easily when cut. About 20–30 minutes in the refrigerator is usually enough.

Troubleshooting Snickers fudge

The fudge is too soft: the chocolate-to-condensed-milk ratio may be too low, or the slab may simply need more chilling time. Use the full amount of semisweet chocolate and chill until firm.

The caramel layer squeezes out when cutting: let the slab chill longer and cut smaller pieces with a sharp knife. A thick caramel layer will always be softer than the chocolate fudge.

The chocolate looks grainy: the heat was probably too high. Melt slowly and stop heating as soon as the mixture is nearly smooth.

Visual cue: a finished square should show a dark chocolate base, a visible caramel-peanut stripe and a thin milk-chocolate top, with the layers holding together when lifted.
