Slow Cooker Spinach Artichoke Dip

This slow cooker spinach artichoke dip is built for parties: creamy enough to scoop, substantial enough to stay on a cracker, and able to stay warm without occupying the oven. The key is controlling moisture before anything goes into the cooker.

Why Make It in the Slow Cooker?

Spinach artichoke dip does not need a slow cooker to become creamy, but the appliance solves a practical party problem: it heats the dip gently and then becomes the serving vessel. That leaves the oven free and makes it easy to keep the dip warm while guests come and go.

The tradeoff is that a covered slow cooker traps moisture. That makes preparation especially important—wet spinach and poorly drained artichokes can turn a thick dip soupy.

Ingredients That Matter

  • Frozen chopped spinach. It is convenient and evenly chopped, but thaw it completely and squeeze it aggressively. This is the single most important texture step.
  • Artichoke hearts. Canned artichokes are ideal here. Drain them thoroughly and chop them into bite-size pieces so every scoop gets some.
  • Cream cheese. This supplies body. Cubing softened or slightly softened cream cheese helps it melt evenly instead of sitting as one dense block.
  • Sour cream and mayonnaise. They loosen the cream cheese and add tang and richness, producing a dip that remains scoopable on the warm setting.
  • Mozzarella and Parmesan. Mozzarella gives the familiar stretchy melt; Parmesan adds salty, savory depth. Together they are more balanced than simply adding more cream cheese.
  • Fresh garlic. Two cloves are enough to season the dip without overpowering the spinach and artichoke.

How to Make Slow Cooker Spinach Artichoke Dip

  1. Get the spinach genuinely dry.

    Put thawed spinach in a clean kitchen towel, gather the towel around it and twist firmly over the sink. Keep squeezing until very little liquid comes out. Pressing it casually in a strainer is usually not enough.

  2. Drain the artichokes.

    Let canned artichoke hearts drain well, then chop them. If they still look wet, blot them briefly before adding them to the cooker.

  3. Load the slow cooker.

    Add the spinach, artichokes, cubed cream cheese, sour cream, mayonnaise, mozzarella, Parmesan, garlic and seasonings to a 3- to 4-quart cooker. A huge cooker spreads this amount too thinly around the heating surface.

  4. Cook on LOW.

    Cover and cook for about 1 1/2–2 hours. Stir after roughly an hour, once the cream cheese has softened enough to combine. Slow cookers vary, so texture and temperature matter more than an exact minute.

  5. Stir until creamy.

    Once the cheeses are melted and everything is hot, stir thoroughly. The spinach and artichoke should be distributed throughout a cohesive creamy base rather than sitting in separate pockets.

  6. Switch to WARM.

    When the dip is ready, stop actively cooking it. The warm setting is for holding; continuing on LOW for hours can cause the edges to overcook and the dairy to become oily.

How to Avoid Watery Spinach Artichoke Dip

Most texture problems begin before cooking. Spinach holds a surprising amount of water even after thawing, and canned artichokes bring additional liquid. Removing that moisture lets the dairy ingredients determine the consistency instead of having to compensate with extra cheese.

Do not add milk at the beginning. If the finished dip somehow seems too thick, it is easy to loosen it with a spoonful of milk after everything has melted; removing excess liquid is much harder.

Party Timing

For a party, prep the spinach and artichokes and measure the remaining ingredients earlier in the day. You can also combine everything in the removable crock insert, cover and refrigerate it, provided your slow-cooker manufacturer allows a refrigerated insert to be heated safely. Otherwise refrigerate the mixture in a separate container and transfer it before cooking.

Start the dip roughly 2 1/2 hours before you want to serve. That gives it time to heat gently plus a little buffer without requiring it to sit on WARM all afternoon.

Keeping It Warm

Once ready, use the WARM setting and stir occasionally, especially around the edges. If it thickens noticeably during a long serving period, stir in a tablespoon or two of milk. Add only a little at a time—you want a scoopable dip, not a sauce.

What to Serve With It

Toasted baguette slices are excellent because their crisp surface holds up to the warm dip. Pita chips, sturdy crackers and pretzel crisps work too. For vegetables, bell pepper strips and celery are sturdier than delicate cucumber slices.

Storing Leftovers

Transfer leftovers out of the warm slow cooker and refrigerate promptly in a shallow covered container. Use within 3–4 days. Reheat only what you need, stirring as it warms so the creamy base comes back together evenly.

  • 1/2 cup (120 g) sour cream
  • 1/3 cup (80 g) mayonnaise
  • 1 cup (115 g) shredded mozzarella
  • 1/2 cup (50 g) finely grated Parmesan
  • 2 cloves garlic, finely minced
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes, optional
  • Crackers, toasted baguette or pita chips, for serving

Instructions

  1. Squeeze the thawed spinach very thoroughly in a clean kitchen towel until it no longer releases much liquid. Drain and chop the artichokes.
  2. Add spinach, artichokes, cream cheese, sour cream, mayonnaise, mozzarella, Parmesan, garlic, black pepper and optional red pepper flakes to a 3- to 4-quart slow cooker.
  3. Cover and cook on LOW for 1 1/2–2 hours, stirring after about 1 hour, until the cheeses are melted and the dip is hot throughout.
  4. Stir thoroughly until creamy and evenly combined. If needed, continue cooking covered for 15–30 minutes.
  5. Switch the slow cooker to WARM for serving. Stir occasionally and serve with sturdy crackers, toasted baguette or pita chips.
Helpful notes
The most important step is squeezing the spinach very dry and draining the artichokes well. Excess liquid makes the finished dip thin. Once melted and creamy, use the WARM setting rather than continuing to cook on LOW.
