Spicy Chicken Dip

- Step 1.
Heat oven to 350°F (175°C). Lightly grease a 1 1/2-quart baking dish.

Stir cream cheese until smooth, then mix in chicken, ranch, 1/3 cup hot sauce, 1 cup cheddar and half the scallions. Taste and add more hot sauce if wanted.

Use cooked chicken that still has some moisture
Rotisserie chicken is practical here, but remove the skin and any very fatty pieces before shredding. Breast meat alone works, though a mix of breast and thigh tends to stay a little more succulent after reheating. The chicken is already cooked, so the oven is for heating the dip and melting the cheese—not cooking the meat a second time.
What the finished dip should look like
At the end of baking, the edges should be visibly bubbling and the center should be hot, with the cheese on top fully melted. You do not need a deeply browned crust. Leaving it in longer for color can push the dairy toward an oily texture and dry the exposed chicken near the surface.

Ranch or blue cheese?
